The Elliott family grows Christmas trees and makes maple syrup north of Hillsburgh, in the Town of Erin. From mid-November until just before Christmas, cut a spruce or Canaan fir in the plantations, or pick a Fraser or balsam fir from the fieldstone tree cellar. On weekends from April into November, guided tours ride out to the sugar bush and end with a waffle and hot taffy poured on ice, back in the old barn that houses a museum of Ontario maple history.
